Fluffy Keto Waffles (sugar free)

I’ll start this post in my best Donkey (Shrek) voice. “And in the morning, I’m making waffles!”
There are mornings that you just wake up and want a little something different. Today was that day. I’ve made keto waffles before, but they were usually very ‘grainy’ tasting, and felt gritty when I ate them. So, like any good food experimenter should do, I got out a pen and paper, collected all of the ingredients that I thought I would need, and got started.
This recipe does call for a few extra ingredients that most waffle recipes don’t include, but, I promise you the end product is well worth a little extra effort!
My preference for sweetener is Pyure but you may use whatever one you love. I have found that this particular one is very versatile, and to me, doesn’t have an aftertaste like some do. Also, since coconut flour can vary from brand to brand, I recommend that you start off with the lesser amount, and add more if necessary. Coconut flour tends to absorb quite a bit of liquid.
Here’s what you’ll need:
2/3 cup almond flour
1/8-1/4 cup coconut flour
1 teaspoon xanthan gum
1/2 tsp psyllium husk
1 1/2 tsp baking powder
3 tbs Pyure
1 cup water
4 tbs butter melted (salted)
3 eggs (beaten lightly)
1 tsp vanilla extract
Toppings that would be delicious are fresh berries, butter, sugar free syrup, or whipped cream
1. Turn on waffle maker, and let it heat up while you get the batter prepared.
2. In a medium sized bowl, mix together almond flour, coconut flour, xanthan gum, psyllium husk, and baking powder.
3. Next, add beaten eggs, melted butter, sweetener, vanilla extract, and water.
4. Stir everything together until well combined, and let the batter rest for 5-10 minutes.
5. Spray waffle iron with non-stick spray.
6. The batter will be thick, but that’s how it’s supposed to be…no worries.
7. Spoon the desired amount into the waffle iron and close the lid. The cooking time will vary, depending on your particular waffle maker, so keep a close eye on it.
8. When your waffles are a golden brown color, they’re done. Remove and serve with your favorite topping!
9. Waffles can be stored in an airtight container in the refrigerator, or simply in a plastic bag, at room temperature for 2-3 days. To reheat them, you can pop them in the toaster.
